Recipes I've Made Recently

Okay, I've tried menu planning and I just couldn't make it stick. I wanted a system that was really basic but I want to be eating healthy. Most of our grocery purchases are fresh veggies and other produce but I'm still not the best about planning ahead which meals I will make when and such.

This past week I pulled off cooking my family some pretty yummy meals and no complaints on any of them. =) You guys know I'm not much of a cook so I'm excited to have finally made some recipes "my own" enough to make them a more constant in our home. What's funny is that I had planned to make a few meals and snacks and gotten ingredients to do so. Then I misplaced my list and winged it with what I bought, but it turned out for the best. And, just because I'm awesome, I'll link the ones I used recipes for.

I can't say every recipe was a home run, but they were all eaten and the goal was to try new recipes to see what we like.

lasagna roll upsThe other night I tackled this awesome lasagna roll up idea over at Cooking Classy. The recipe is for 12 servings but I only had 10 lasagna noodles, no biggie. When I read the recipe a little closer I noticed it said crushed tomatoes, which I didn't have, so I used a jar of mexican seasoned diced tomatoes and blended. My hubby was so excited that I had made him a mexican lasagna that wasn't overdoing it. Haha, he didn't even know it was actually a mistake. I did manage to freeze 7, but my hubby baked one container that had three while I was napping this weekend. He liked that he could just toss it in the oven for 25 minutes and have it ready to eat. I will definitely be making more in different variations like a white sauce and spinach version-YUM!

We also had some yummy healthy smoothies to use up some fruit. I tossed in some strawberries, kiwis, and a nectarine with some ice, a splash of almond milk and a tiny bit of vanilla. Blend and enjoy. =) These are a staple around here because you just switch out the fruit and sub some ice for yogurt if you want it creamier.

avocado mac and cheeseTonight, I made this Avocado Macaroni & Cheese you may have seen on Pinterest. Well, it can be found at Two Peas and Their Pod.  I didn't have enough pepper jack, so I added some fresh grated parmesan and swiss cheese. I think it turned out pretty well. I actually don't like avocados but I noticed the ones I routinely buy for my two better parts were needing to be used.

I also must admit, that for the second night in a row now I have forgotten that the meal I was planning to make, this yummy looking tortellini soup at BHG takes like 7 hours in the slow cooker. I'm a big slow cooker fan, but I've forgotten for two days now to even think about dinner until it's almost dinner time. Well, there's always tomorrow, right?

    I'm horrid with planning meals as well. I remember right about 5:30 (dinner is sometime between 6 and 7), that I haven't thawed anything out. >.<

  2. The impossible has happened. You made me want to cook! These dishes ALL look fantastic... the lasagna roll ups are something I can make for my daughter's lunches next year. I make her fancy school lunches & she and her pals LOVE it... always looking for new stuff!
